Kale Waldorf Salad (Serves 10)

Poor physical health, poor mental clarity, low energy can cause and perpetuate depression, anxiety, and a host of other afflictions. We teach our clients the importance of nutrition and that adopting healthy eating can be easy, healing, meditative, CREATIVE and FUN! “Eating your greens” has never been easier with this salad! So dense and full of protein (yes…protein), minerals, antioxidants, and most importantly, FLAVOR! We create this salad using all of our senses: How does it look, smell, taste? Do we need more salt or more sweetness? It’s all about not taking a recipe too seriously, relying on personal preference and letting the creativity fly!

1 small head Napa cabbage, thinly chopped
1 head romaine lettuce, thinly chopped
3-4 stalks celery, small slice
1 bunch kale, thinly sliced
5-6 red apples, small chop
2 cups dried cranberries
1 cup chopped walnuts
1 cup raisins (optional)
Organic Dijon mustard
Apple Cider Vinegar
Salt & Pepper 

Waldorf

1. Add the chopped kale to a large bowl along with walnuts, half of the cabbage and romaine
2. Add the apples, cranberries, celery
3. Whisk together Apple Cider Vinegar and mustard. This is part of the artistic exploration: start with 1-2 tbs. of mustard to half cup of ACV. Add salt and pepper to taste. If you want more sweetness mash in some chopped apple. Keep adding these ingredients in the proportions that work for you. Go wild and trust the process!
4. Pour salad dressing into the salad and mix thoroughly. About 3/4 to 1 cup of dressing should work for this salad.
5. Add in more greens as you desire. Add in raisins if you crave a little more sweetness.
6. Serve and Savor!

For a Nut-Free Option 
1. Cook 1 cup red quinoa (2:1 ratio to water. Simmer for 20 minutes). Let cool. 
2. Add to finished mixture instead of nuts! 
3. Enjoy! 

1 head of romaine lettuce has 7.7g of protein and contains all the essential amino acids! Kale contains omega-3 and vitamin k – both great for reducing inflammation in the body!
